Pasada Pastrana Manzanilla, Bodegas Hildago-la Gitana
Pastrana is a single vineyard, on the crest of a hill near the sea, therefore cooled by the sea breezes. These grapes have great intensity of flavour. The wines are aged for longer in American oak casks than their La Gitana. Manzanilla La Pastrana is deeper coloured as a result, and is savoury, dry, refreshing and very, very complex.
Serve slighty chilled, this lends itself well to food - we loved it with a roasted butter squash soup, but clearly any classic selection of tapas will work wonders too. Or simply with some salted almonds.
