Originally one of the World's most celebrated sweet wines, Vin de Constance is being returned to former glories by the Joost family. Traditional methods are carefully followed in the making of the modern Vin de Constance: grapes are left to ripen on the vines until late March, when they shrivel to sweet, raisined berries.
