    A mix of orchard fruits,  and white blossom on the nose, follows with ripe pears, gooseberries and apples on the palate with a wonderfully precise, mineral-citrus acidity.  This has more wight of fruit on the palate compared to the 2010 and hard to believe this wine comes from England.  Very close to what you would expect to see from Alsace.

    Not every new winemaking venture in Southern England is only interested in making sparkling  wines.  At the heart of this modern 6 hectare estate are some of the most attention grabbing wines we came across.  Simon Woodhead  who heads up this venture feels that the delicate nature of English wine can only be preserved by a slow, yet controlled fermentation, ideally over a 6 week period.  To achieve this, he has developed a CO2 sensor to automatically adjust the rate of fermentation by adjusting the temperature of the must accordingly.  This was very similar to the design of censors he had worked on during his earlier career with McLaren F1.  As far as he knows, this is the only estate to use this technology. The results speak volumes and considering this is his first vintage, the future looks assured for this estate.  Simon also proudly showed off his new bottling machine, which he feels completes the total control he needs to ensure the journey from vineyard to bottle and ultimately your table is of the highest quality possible.  We'll drink to that !
